Memorial Day Weekend


I think this shot of Lexter says it all for Memorial Day weekend, chillin and BBQing. The weather was great this weekend, so we set up Gigi's water park. A combination of pools and slides (although she has yet to actually go down one of the slides!) She really had a blast with the pools.



We also had a chance to visit with our friends over at Deep Creek for more BBQ.

Beautiful Day

It was a beautiful day to go downtown. Much better than when we (like crazy fools) went down to the tidal basin when the cherry blossoms were blooming. Today the weather was great and the tidal basin was ours to enjoy without the masses. One day I think I need to get a Frommers DC book and check out all the spots the tourist come to see, we are right here and can see it anytime, why miss out?

My New favorite Chicken Recipe

Colorful Chicken Thighs

5 skinless boneless chicken thighs
1 red pepper, sliced
1 pk sliced Portobello mushrooms
Olive oil
Pepper seasoning mix
Garlic salt
White pepper
Goat cheese
Green beans (precut and washed)

Rinse chicken thighs. Heat large pan with small amount of olive oil. Add Chicken thighs, red pepper and portabellos. Sprinkle with seasonings. Brown both sides of chicken turning. Lower heat and continue to cook until done (cover if needed), approx 20 minutes. Meanwhile cook green beans. Serve chicken with some mushrooms and peppers piled on top and the top with a tablespoon of goat cheese. Serve green beans on the side.

Recipes

Here are few recipes that a friend requested, I figured I would share them with all...

Orzo Salad

1 box Orzo pasta cooked according to directions
1 package cherry tomatoes cut in half
1 small container marinated artichoke hearts chopped
1 cucumber peeled and chopped
1 can red kidney beans, drained and rinsed
1 bunch cilantro chopped
½ cup or so Ken’s Basil Balsamic vinaigrette

Toss and chill


Chicken Picatta

3 chicken breasts, cut cutlet style(or one package chicken tenderloins)
1 egg
2 T Milk
1 cup or so seasoned bread crumbs
Butter and more butter
1 lemon
Water
2 chicken bullion cubes
2 cups rice cooked

Beat egg with milk. Wash chicken and dip into egg mixture then coat with bread crumbs. Brown chicken on both sides in a tablespoon or so of butter. Add about a half cup of water, juice from the lemon and the bullion cubes. Reduce heat to simmer, cover and cook 20 minutes. Serve over rice.

A little BBQ

This weekend the weather was perfect for a little BBQ. We had a few friends over and fired up the Barby. Gigi had a blast running around with Ben, in fact she went down for her nap and is STILL sleeping as I write this!

Mickey's Magic Show

This weekend we went to see Mickey's Magic show. Gigi was thrilled! At first she was a little timid about going into the arena. After that she was happy when her buddy Andrew showed up. Once the lights went down and the show started she was scared but interested. And then when the princesses came out she was quite excited! No cmaeras allowed but I got a few shots anyway.
