Memorial Day Weekend

Winding down a nice holiday weekend is always a hard thing to do. The extra day really spoils you into getting used not going to work everyday.


A few fun things happened this weekend. First I had ordered a swing set for G. and it arrived on Wednesday. She was very excited and couldn’t wait for the weekend so we could put it together. This ended up taking a good chunk of the day Saturday, but well worth it. We also set up Gigi’s water park, a collection of kiddie pools and a slide, and a sprinkler added in. This was great for keeping cool on Saturday. Because yikes! summer is here and it was hot.


Sunday Gigi had a friend from daycare and her sister over to visit. The girls played for three hours straight. Gigi was so tired she didn’t stay up late “reading” her books like she usually does.





Monday was a nice Lazy day; hanging around the house, washing the car and cooking good food. Later in the afternoon we walked down to the creek to throw in some rocks. Easy stuff. Plus we ate well, here are few new recipes for you:

Marinated Chicken Kabobs

Cut a few chicken breasts into cubes, marinate them in a mixture of
Plain Yogurt
Minced Parsley
Minced Thyme
Minced Rosemary
Lots of pepper
Sea salt
A crushed clove of garlic.

Thread on skewers with red onion and grill.

Summer Pasta Salad

Toss chopped cucumbers, halved cherry tomatoes, thinly sliced red onions in a vinaigrette of red wine vinegar, olive oil, water, salt and pepper. Add cooked pasta shells and cool. Toss again before serving.

Easy Weekend


We had a nice peaceful weekend. The weather was good, although it could have been a bit warmer, so we spent a lot of time outdoors. Above is Tooty helping out with some tree trimming.
